A British Turkish Cypriot chef has featured in an international series of Recipes for Ramadan (‘Ramazan’ in Turkish). Hulya Erdal appears in a ten-minute online clip cooking homemade Tepsi Kebabı, the perfect meal for iftar (breaking of the daily fast).
Speaking entirely in Turkish, Hulya first wishes Muslims worldwide a happy Ramazan and also reflects on all those who have left their lives during the coronavirus pandemic.

She then takes viewers through the different ingredients she will use, before demonstrating step-by-step how to make this delicious meat dish, which literally means ‘kebab in a tray’.
Tepsi Kebabı comprises of lamb or beef köfte with potatoes cooked in a rich tomato garlic sauce, and topped with a buttery yogurt dressing just before serving.
The clip is part of a Ramazan series for the Yurtdışı Türkler ve Akraba Topluluklar Başkanlığı (‘Presidency for Turks Abroad and Related Communities’), or YTB for short. The organisation, based in Ankara and tied to the Turkish Presidency, supports the Turkish Diaspora worldwide.
YTB has invited Turks abroad to present an iftar dish throughout the holy month. Each day during Ramazan, YTB shares a video of recipe from a different country on its YouTube channel.

Hulya is a professionally trained chef with an expertise in Eastern Mediterranean and Middle Eastern cuisine. Initially working in marketing, twenty years ago she decided to move into catering and teaching, and has never looked back.
